Step 1

In a large skillet over medium heat brown ground beef, breaking it up as you brown. Season the meat with chili powder, salt & cumin stirring it into the browning meat. Remove beef and set aside.

Step 2

To the same skillet add onion and peppers and begin to cook over medium heat until onions are soft.

Step 3

Add in green chilis and garlic, cooking for an additional 1-2 minutes, stirring constantly

Step 4

Stir in enchilada sauce and cooked meat, stirring to combine, letting mixture come to a boil over medium high heat, then let simmer for 10-15 minutes or until sauce is reduced by 1/4.

Step 5

Stir in greens and cook until wilted (about 1 minute)

Step 6

Sprinkle cheese over the top and let simmer until cheese is melted

Step 7

Serve with taco shells.

Perfect blend of spices & sauce for a peppy spicy flavour. We loved this recipe! It looks so attractivel. This time I served it with rice next time it will be in a tostado shell with added sour cream on top as well as the cilantro & tomatoes. I cut the recipe in half, added 3 cups of spinach and some corn that I had in the fridge. The result was 3 generous servings. This will go into our favourites and be made many times again. 13 Jul 19 As said, this is very very tasty! You may make it as hot or not as you like. I used fresh jalapeno instead of canned chilies and medium salsa instead of the enchilada sauce. I added cheddar cheesse on top for the last 15 minutesThis recipe will be made many more times Thanks PatioDad for posting it.
