Ingredients

The ingredients are:
  • 1 pound ground beef (or ground turkey)
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers, chopped (I used a variety of the mini peppers)
  • 1 can (4 ounce) chopped green chilies
  • 2 garlic cloves, minced
  • 1 cup enchilada sauce (I used hot)
  • 2 cups baby spinach
  • 1 cup shredded cheese (mexican blend)
  • Optional Toppings
  • Fresh cilantro
  • Sour cream
  • Chopped tomatoes
  • Chopped avocados
  • Additional shredded cheese

How to Make

  • Step 1: In a large skillet over medium heat brown ground beef, breaking it up as you brown. Season the meat with chili powder, salt & cumin stirring it into the browning meat. Remove beef and set aside.

  • Step 2: To the same skillet add onion and peppers and begin to cook over medium heat until onions are soft.

  • Step 3: Add in green chilis and garlic, cooking for an additional 1-2 minutes, stirring constantly

  • Step 4: Stir in enchilada sauce and cooked meat, stirring to combine, letting mixture come to a boil over medium high heat, then let simmer for 10-15 minutes or until sauce is reduced by 1/4.

  • Step 5: Stir in greens and cook until wilted (about 1 minute)

  • Step 6: Sprinkle cheese over the top and let simmer until cheese is melted

  • Step 7: Serve with taco shells.
