Step by Step Method

Step 1

Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook until browned, about 8 minutes, making sure to crumble the turkey as it cooks; drain excess fat.

Step 2

Stir in salsa, green chiles and taco seasoning until heated through, about 2-3 minutes. Stir in corn, beans and cilantro until well combined; season with salt and pepper, to taste.

Step 3

To serve: spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style. Top with with cheddar cheese and sour cream. Serve.
