Ingredients

The ingredients are:
  • 1 tablespoon oil (olive oil)
  • 1 pound ground turkey
  • 1 cup salsa (I used the medium heat)
  • 1 can (4 ounce) green chiles (diced)
  • 2 tablespoons taco seasoning mix (I used the whole package)
  • 1 can corn (15 ounce, drained)
  • 1 can black beans (15 ounce drained, rinsed)
  • 2 tablespoons fresh cilantro, chopped
  • Kosher salt and freshly ground black pepper, to taste
  • Large butterhead lettuce leaves (as many as you want to use)
  • Shredded cheddar cheese
  • Reduced-fat sour cream

How to Make

  • Step 1: Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook until browned, about 8 minutes, making sure to crumble the turkey as it cooks; drain excess fat.

  • Step 2: Stir in salsa, green chiles and taco seasoning until heated through, about 2-3 minutes. Stir in corn, beans and cilantro until well combined; season with salt and pepper, to taste.

  • Step 3: To serve: spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style. Top with with cheddar cheese and sour cream. Serve.
