Step by Step Method
Step 1
Fill a large stock pot with water and bring to boil.
Step 2
Boil the potatoes until tender.
Step 3
Drain.
Step 4
Transfer the potatoes to a large bowl and mash them well.
Step 5
Add the diced onion, olive oil, salt, pepper and lemon juice.
Step 6
Stir.
Step 7
Fry the sliced yellow onion in a little bit of olive oil until crispy.
Step 8
Set aside.
Step 9
Lightly fry the pine nuts until browned being careful not to burn them!
Step 10
Garnish the crispy onions and browned pine nuts
Step 11
And fresh flat leaf parsley on top of the mashed potatoes.
