Step 1: Fill a large stock pot with water and bring to boil.
Step 2: Boil the potatoes until tender.
Step 3: Drain.
Step 4: Transfer the potatoes to a large bowl and mash them well.
Step 5: Add the diced onion, olive oil, salt, pepper and lemon juice.
Step 6: Stir.
Step 7: Fry the sliced yellow onion in a little bit of olive oil until crispy.
Step 8: Set aside.
Step 9: Lightly fry the pine nuts until browned being careful not to burn them!
Step 10: Garnish the crispy onions and browned pine nuts
Step 11: And fresh flat leaf parsley on top of the mashed potatoes.
