Ingredients

The ingredients are:
  • 1 1/2 pounds potatoes (4 medium, peeled and cut into 2-3-inch chunks)
  • 1 yellow onion, diced
  • 1/4 cup olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 lemon (juice of)
  • 1 large yellow onion, sliced
  • 1/2 cup pine nuts
  • 1/4 cup fresh flat leaf parsley

How to Make

  • Step 1: Fill a large stock pot with water and bring to boil.

  • Step 2: Boil the potatoes until tender.

  • Step 3: Drain.

  • Step 4: Transfer the potatoes to a large bowl and mash them well.

  • Step 5: Add the diced onion, olive oil, salt, pepper and lemon juice.

  • Step 6: Stir.

  • Step 7: Fry the sliced yellow onion in a little bit of olive oil until crispy.

  • Step 8: Set aside.

  • Step 9: Lightly fry the pine nuts until browned being careful not to burn them!

  • Step 10: Garnish the crispy onions and browned pine nuts

  • Step 11: And fresh flat leaf parsley on top of the mashed potatoes.
