"This comes together quickly and is much healthier than the mayo-laden salads! I sometimes add 1/2 cup of chopped pinapple, giving it a tropical twist. A handful of chopped pecans is a really good addition, too."

Step by Step Method

Make the dressing by combining all of the ingredients in a small bowl. Set aside.

Make the salad by combining all of the ingredients in a large bowl. Add 1/2 cup of chopped pineapple (optional).
Step 3
Drizzle the dressing over the salad and toss to combine until all ingredients are coated. Refrigerate until ready to use. Serve as a sandwich or over a salad greens.
