Step by Step Method
Step 1
Combine the sweet potato, 2 tablespoons soy sauce, 1/4 cup mirin and sugar in a small saucepan with about 1/2 cup water and cover and cook over medium heat until the sweet potato is tender about 10 to 15 minutes, adding a little more water if necessary.
Step 2
Uncover and cook, stirring occasionally, until the sweet potato pieces are glazed and mixture in almost dry and then add the remaining teaspoon of soy sauce and mirin and cook for another 5 seconds and serve.
