"This is one of my all time favorite condiments. It is wonderful on hot dogs, burgers, bratwurst and sausages; and, I have also served this warm on a hoagie sandwich. It holds up well in the refrigerator for a couple of weeks. As I said, this can be served warm or cold. "

Step 1
Onions ... In a large saute pan, add the oil and bring to medium heat. Then, add the onions, celery, and jalapeno and cook for 10-12 minutes until tender, stirring often. You want the onions to sweat and not brown. The last minute, stir in the pimentos.
Step 2
Sugar and Vinegar ... Add the sugar, cider vinegar, water, celery seeds, salt, and pepper and stir until everything is combined. Bring to a boil and then reduce to a simmer. Cook 25-30 minutes until the relish is thick. Remove from the heat and transfer to a bowl to cool. Once the relish has cooled, cover with plastic wrap or transfer to a tupperware type of container and refrigerate until ready to use.
Step 3
Serve ... ENJOY! on burgers, brats, sausages, hot dogs and sandwiches. And it can be served warm or cold.
