Ingredients

The ingredients are:
  • 6 cups sweet onions, diced (not too fine)
  • 1/3 cup celery, diced
  • 1 (2 ounce) jar pimentos, drained
  • 1 jalapeno, fine diced (seeds and ribs removed)
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1/4 cup water
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 3 teaspoons vegetable oil (don't use olive oil)

How to Make

  • Step 1: Onions ... In a large saute pan, add the oil and bring to medium heat. Then, add the onions, celery, and jalapeno and cook for 10-12 minutes until tender, stirring often. You want the onions to sweat and not brown. The last minute, stir in the pimentos.

  • Step 2: Sugar and Vinegar ... Add the sugar, cider vinegar, water, celery seeds, salt, and pepper and stir until everything is combined. Bring to a boil and then reduce to a simmer. Cook 25-30 minutes until the relish is thick. Remove from the heat and transfer to a bowl to cool. Once the relish has cooled, cover with plastic wrap or transfer to a tupperware type of container and refrigerate until ready to use.

  • Step 3: Serve ... ENJOY! on burgers, brats, sausages, hot dogs and sandwiches. And it can be served warm or cold.
