To make sauce, heat 1 tablespoon olive oil in a medium saucepan over medium heat and cook onion for 3 minutes and then add chilli and ginger and cook for a further 2 minutes, then add pineapple and cook for a further minute.
Add vinegar, tomato sauce, soy sauce, sugar and pineapple juice and bring to a simmer and simmer for 6 to 7 minutes, or until sauce begins to thicken and then remove from the heat.
Place a large frying pan over high heat and add remaining oil and one the oil begins to smoke, add prawns and cook for 2 minutes, stirring occasionally and then add beans and cook for a further 2 minutes, then season lightly with salt and pepper.
Add sweet and sour sauce and toss well to coat prawns and green beans and the garnish with chopped coriander and serve with steamed rice.
