Step 1: To make sauce, heat 1 tablespoon olive oil in a medium saucepan over medium heat and cook onion for 3 minutes and then add chilli and ginger and cook for a further 2 minutes, then add pineapple and cook for a further minute.
Step 2: Add vinegar, tomato sauce, soy sauce, sugar and pineapple juice and bring to a simmer and simmer for 6 to 7 minutes, or until sauce begins to thicken and then remove from the heat.
Step 3: Place a large frying pan over high heat and add remaining oil and one the oil begins to smoke, add prawns and cook for 2 minutes, stirring occasionally and then add beans and cook for a further 2 minutes, then season lightly with salt and pepper.
Step 4: Add sweet and sour sauce and toss well to coat prawns and green beans and the garnish with chopped coriander and serve with steamed rice.
