Ingredients

The ingredients are:
  • 2 tablespoons olive oil (virgin olive oil)
  • 100 grams yellow onion (1/2 onion, finely chopped)
  • Red chilli (1/2 chilli, thinly sliced)
  • 2 tablespoons ginger root (finely chopped)
  • 1 cup pineapple (fresh, finely chopped)
  • 1/4 cup rice wine vinegar
  • 1/4 cup tomato sauce
  • 2 tablespoons soy sauce
  • 1/4 cup brown sugar
  • 3/4 cup pineapple juice (fresh)
  • 500 grams fresh shrimp ( raw prawns, peeled and deveined and leave tails on)
  • 2 cups green beans
  • 1 tablespoon coriander, chopped
  • Steamed white rice, to serve

How to Make

  • Step 1: To make sauce, heat 1 tablespoon olive oil in a medium saucepan over medium heat and cook onion for 3 minutes and then add chilli and ginger and cook for a further 2 minutes, then add pineapple and cook for a further minute.

  • Step 2: Add vinegar, tomato sauce, soy sauce, sugar and pineapple juice and bring to a simmer and simmer for 6 to 7 minutes, or until sauce begins to thicken and then remove from the heat.

  • Step 3: Place a large frying pan over high heat and add remaining oil and one the oil begins to smoke, add prawns and cook for 2 minutes, stirring occasionally and then add beans and cook for a further 2 minutes, then season lightly with salt and pepper.

  • Step 4: Add sweet and sour sauce and toss well to coat prawns and green beans and the garnish with chopped coriander and serve with steamed rice.
