Step 1

If you're using kombucha, skip straight to assembly stage but if using the sparkling water, place the honey in a small saucepan, and add 1 cup grapefruit juice and warm over a medium heat until just barely simmering.

Step 2

You only want just enough heat to melt the honey completely and then pour into a large jug and pop in the fridge to cool completely, then stir in the remaining grapefruit juice.

Step 3

To assemble the cocktail, fill each glass half with two-thirds full of ice and add your shot of tequila or vodka (if using) along with 2 to 3 sliced strawberries nd mix the strawberries in the ice, then fill the glass with half the kombucha and half grapefruit juice (or half sweetened grapefruit juice and half sparkling water), if not using kombucha.

Step 4

Swizzle lightly to combine, then sip away in merriment.

Step 5

For an extra zing, before filling the glasses, moisten their rims and dip hen upside down in a sauce of pink Himalayan salt.
