"Tangy, refreshing salad that goes well with shrimp or any oriental meal.Harusame noodles are the Japanes transparent noodles. If you are not going to use the dressing right away put it in a sealed container so it doesn't go flat. You may omit the ham if you wish"

Step by Step Method

Step 1

Combine the vinegar,sugar, soy sauce, salt, ginger, dijon in a saucepan , bring to a boil, do not stir until it boils - set aside to cool

Step 2

Bring a pot of water to boiling and immerse the harusame noodles for 3 to 4 minutes. They are cooked when there are no white streaks and they are pliable

Step 3

Drain the noodles and rinse them in cold water

Step 4

Artistically place the cucumber, carrot, chopped egg and ham in individual bowls, pour in the dressing, serve and enjoy
