Step 1: Combine the vinegar,sugar, soy sauce, salt, ginger, dijon in a saucepan , bring to a boil, do not stir until it boils - set aside to cool
Step 2: Bring a pot of water to boiling and immerse the harusame noodles for 3 to 4 minutes. They are cooked when there are no white streaks and they are pliable
Step 3: Drain the noodles and rinse them in cold water
Step 4: Artistically place the cucumber, carrot, chopped egg and ham in individual bowls, pour in the dressing, serve and enjoy
