Step by Step Method

Step 1

Cut the peaches in halves and remove the stones from each. Using a teaspoon, remove some of the flesh for the center of the peaches. Chop the flesh and place it into a bowl with the crushed biscuits, liquer, egg yolks, sugar almonds and most of the butter and mix well.

Step 2

Stuff each of the peach half with this biscuit mix and top each with a small knob of butter. Place the peaches onto an lightly oiled baking tray and cook in a moderate oven (200c, 400f) for 35- 40 minutes.

Step 3

Remove from oven and arrange peaches on a serving dish and sprinkle with the icing sugar. Serve warm or cold.
