Ingredients

The ingredients are:
  • 6 (900 grams) peaches (yellow, large peaches)
  • 100 grams amaretti biscuits (crushed, 4 ounces)
  • 2 tablespoons liqueur (Amaretto or other liquer)
  • 2 egg yolks
  • 75 grams sugar (1 1/2 ounces)
  • 40 grams almond nuts (blanched almonds, finely chopped, 1 1/2 ounces)
  • 50 grams butter ( 2 ounces)
  • 1 tablespoon icing sugar (to decorate)

How to Make

  • Step 1: Cut the peaches in halves and remove the stones from each. Using a teaspoon, remove some of the flesh for the center of the peaches. Chop the flesh and place it into a bowl with the crushed biscuits, liquer, egg yolks, sugar almonds and most of the butter and mix well.

  • Step 2: Stuff each of the peach half with this biscuit mix and top each with a small knob of butter. Place the peaches onto an lightly oiled baking tray and cook in a moderate oven (200c, 400f) for 35- 40 minutes.

  • Step 3: Remove from oven and arrange peaches on a serving dish and sprinkle with the icing sugar. Serve warm or cold.
