Step by Step Method
Step 1
Preheat large nonstick skillet over medium-high heat with the olive oil (a well seasoned cast iron skillet, works well too) . Add the sausage and brown for 3 minutes. Cut the sausages into bite size pieces, if you'd like.
Step 2
Add sweet potatoes to the skillet with the sausages. Add red onion and remaining seasonings, up to black pepper. Cook for 10 - 12 minutes or until the potatoes are tender. Sprinkle with cheddar cheese and serve.
