Ingredients

The ingredients are:
  • 2 tablespoons extra-virgin olive oil
  • 1/2 pound maple breakfast sausage
  • 1 sweet potato, medium, thinly sliced
  • 1 red onion, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 teaspoons ground coriander
  • 1 cup cheddar cheese, extra-sharp, shredded

How to Make

  • Step 1: Preheat large nonstick skillet over medium-high heat with the olive oil (a well seasoned cast iron skillet, works well too) . Add the sausage and brown for 3 minutes. Cut the sausages into bite size pieces, if you'd like.

  • Step 2: Add sweet potatoes to the skillet with the sausages. Add red onion and remaining seasonings, up to black pepper. Cook for 10 - 12 minutes or until the potatoes are tender. Sprinkle with cheddar cheese and serve.
