Step by Step Method

Step 1

In a bowl toss berries with 2/3 cup sugar and cover and refrigerate for 3 hours.

Step 2

Preheat oven to 400 degrees F.

Step 3

In a food processor combine flour, remaining 2 tablespoons sugar, poppy seeds, dream of tartar, baking soda and salt. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add half and half; mix just until moist clumps form. Turn dough out onto a floured surface and roll out to 1/2 inch thick round. Cut out biscuits using a 3 1/4 inch round cookie cutter. Transfer to cookie sheet, spacing them apart and bake until golden brown (10-15 minutes). Cool on a rack.

Step 4

Using a seated knife, cut biscuits horizontally in half. Place lower halves cut cut side up on plates; top with berries and dollops of whipped cream. Cover with biscuit tops. Serve, passing remain berries and additional whipped cream.

Wow, these were a huge hit with company last night. My brother-in-law, especially, couldn't stop raving about them. He said this could make it onto any restaurant menu. Super tasty and beautiful. I made the pastry earlier in the day - sliced and then stored them in a ziplock baggie. I also made some homemade whipped cream - sweetened with a bit of sugar. I also served it with a scoop of vanilla bean ice cream. Delish! My tip is to make sure to keep that 1/2" thickness in mind when rolling and cutting the dough - you may only get 3 done from the first roll, but keep collecting and re-rolling dough until you get 6. I probably erred on them being a little too thin this time - but it still worked and could slice in half. Thank you!

These Strawberry Shortcakes were wonderful. First of all, the cake base was very good and had a wonderful flavor and had a perfect texture that was light but delicious that went so well topped with the sweetened strawberries. We really enjoyed your recipe, Ellie. It was quite a nice treat for us.
