"This recipe was found years ago at africadotupenndotedu/Cookbook/Dessert. The intro said: "The term FOOL (also Egyptian for lentils) comes from the English & means essentially a fruit puree folded into a soft custard or whipped cream. You may begin w/any good custard recipe, vanilla pudding or whipped cream." Over time the definition has been modified & I modified it even further in response to reviewer comments. There are apparently 3 African FOOLS: Strawberry (Ghana), Peach (Liberia) & Peanut (Nigeria). Enjoy!"

Step by Step Method

Step 1

Gently combine the 1st 3 ingredients & allow them to marinate for 1 hr.

Step 2

Beat 1 cup heavy cream until stiff.

Step 3

Divide the strawberry mixture equally (with its liquid) into 3 footed sherbet glasses. Garnish each serving w/1 whole strawberry.

We really enjoyed this dessert. I was not sure how much to fold in the strawberries, so I just did it very lightly, but I think I should have folded the mix through a little more.... ahh well next time! Served with extra cream and a strawberry on top this made for one creamy & delicious dessert.
