"A lovely cake to serve with coffee or tea or as a dessert. I came up with this recipe when I had a bit of coconut milk I wanted to use up. I played around with different coffee cake recipes and put this one together."

Step by Step Method

Step 1

Preheat oven to 375 degrees Fahrenheit.

Step 2

Grease a 9 inch deep dish pie plate.

Step 3

In a large bowl, mix together 1 cup flour, 1/2 cup sugar, baking powder and salt.

Step 4

In a separate bowl, mix together the egg, melted butter, coconut milk and coconut extract.

Step 5

Pour liquid mixture into dry mixture and mix until just moist.

Step 6

Pour into prepared pie plate and spread evenly over bottom.

Step 7

If the strawberries are large, cut them in half, if small leave whole.

Step 8

Add the strawberries evenly over batter.

Step 9

With a pastry cutter, mix together 1/2 cup flour, 1/2 cup sugar and the cold butter until the mixture is crumbly.

Step 10

Mix in the coconut.

Step 11

Pour over the strawberries and spread evenly.

Step 12

Bake for 1 hour or until toothpick inserted in the middle comes out clean.
