  • 1 1/2 cup all-purpose flour, separated
  • 1 cup sugar, separated
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • 1/2 cup coconut milk
  • 1 teaspoon coconut extract
  • 2 cups frozen strawberries, thawed and drained
  • 1/4 cup cold butter
  • 1/2 cup sweetened flaked coconut

How to Make

  • Step 1: Preheat oven to 375 degrees Fahrenheit.

  • Step 2: Grease a 9 inch deep dish pie plate.

  • Step 3: In a large bowl, mix together 1 cup flour, 1/2 cup sugar, baking powder and salt.

  • Step 4: In a separate bowl, mix together the egg, melted butter, coconut milk and coconut extract.

  • Step 5: Pour liquid mixture into dry mixture and mix until just moist.

  • Step 6: Pour into prepared pie plate and spread evenly over bottom.

  • Step 7: If the strawberries are large, cut them in half, if small leave whole.

  • Step 8: Add the strawberries evenly over batter.

  • Step 9: With a pastry cutter, mix together 1/2 cup flour, 1/2 cup sugar and the cold butter until the mixture is crumbly.

  • Step 10: Mix in the coconut.

  • Step 11: Pour over the strawberries and spread evenly.

  • Step 12: Bake for 1 hour or until toothpick inserted in the middle comes out clean.
