Step 1: Preheat oven to 375 degrees Fahrenheit.
Step 2: Grease a 9 inch deep dish pie plate.
Step 3: In a large bowl, mix together 1 cup flour, 1/2 cup sugar, baking powder and salt.
Step 4: In a separate bowl, mix together the egg, melted butter, coconut milk and coconut extract.
Step 5: Pour liquid mixture into dry mixture and mix until just moist.
Step 6: Pour into prepared pie plate and spread evenly over bottom.
Step 7: If the strawberries are large, cut them in half, if small leave whole.
Step 8: Add the strawberries evenly over batter.
Step 9: With a pastry cutter, mix together 1/2 cup flour, 1/2 cup sugar and the cold butter until the mixture is crumbly.
Step 10: Mix in the coconut.
Step 11: Pour over the strawberries and spread evenly.
Step 12: Bake for 1 hour or until toothpick inserted in the middle comes out clean.
