Step by Step Method

Step 1

Preheat oven to 160°C and line a large baking tray with baking paper.

Step 2

Cut each rack of ribs in half and combine tomato sauce, hoisin sauce, chilli sauce and garlic in a large bowl and add ribs and toss to coat.

Step 3

Arrange ribs in a single layer on baking tray, reserving any remaining marinade and cover with foil and bake for 45 minutes. Remove foil and increase temperature to 210°C and bake for 20 minutes, basting with reserved marinade halfway through cooking, or until glazed and tender.

Step 4

Remove ribs from oven and cut into individual pieces and serve with salad and sweet potato wedges.

Step 5

NOTE - To make sweet potato wedges, peel and cut 500 grams orange sweet potato into wedges and place in a microwave-safe bowl. Cover and microwave on high (100%) for 3 minutes and then transfer to a baking tray lined with baking paper and bake at 210°C for 20 minutes or until tender (or add to oven in step 3, above).

These came out sticky and delicious...I used ketchup in place of the tomato sauce...I think Australia's tomato sauce is America's ketchup...and I added a touch of horseradish to my Chili sauce to give it the heat...I cooked the ribs and extra 1/2 hour on the low heat to get them more tender...I served them with a side of onion rings and baked beans for a yummy meal...thanks for sharing your recipe...
