Step by Step Method

Step 1

In a large pot, boil potatoes and squash until tender; drain and return to pot.

Step 2

Sprinkle parmesan over vegetables, cover with lid and let stand 1 minute.

Step 3

Add sour cream, salt, pepper and nutmeg.

Step 4

Beat with a handheld mixer until smooth.

We enjoyed these potatoes. I did scale the recipe back, on the plus side from my storage Yukon potatoes and butternut squash from my summer garden. Followed through as posted and topped with fresh chives I have growing under lights. Using my garden produce almost had me thinking warm and sunny! Another Luvcookn winner!
