Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Heat oil in 10 inch cast iron skillet.

Step 3

On medium heat saute onions until caramelized.

Step 4

While cooking the onions: in a large bowl whisk the eggs, salt and pepper.

Step 5

When thoroughly mixed, fold in the spinach, parsley and parmesan.

Step 6

Add the mushroom and garlic to the caramelized onions, continue to cook until mushrooms are wilted.

Step 7

Turn stove to low. Pour in the egg mixture. Cook approximately three minutes stirring occasionaly until the bottom is set.

Step 8

Place cast iron pan in hot oven, bake uncovered for 10 minutes or until the top is set.

Step 9

Remove, cut into wedges, serve.

We enjoyed this for dinner with tossed salad and rolls, but I need to make a disclaimer -- thought I had spinach but it was actually kale (which I used) and also used swiss cheese. It still worked out but if I had the correct ingredients it may have been better. Thanks for sharing!

This has made for a terrific breakfast this morning with a slice of crusty toasted bread. I scaled back for one serve and made as directed and thoroughly enjoyed, thank you dienia b made for Only The Lonely Tag Game at FF&F.
