Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 1/2 cup sliced yellow onion (thinly sliced)
  • 1 clove garlic, crushed
  • 10 large eggs
  • 2 whole mushrooms (diced)
  • 1 tablespoon parsley, chopped
  • 8 ounces spinach, chopped
  • 1/3 cup parmesan cheese, grated
  • Salt, dash
  • Pepper, dash

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Heat oil in 10 inch cast iron skillet.

  • Step 3: On medium heat saute onions until caramelized.

  • Step 4: While cooking the onions: in a large bowl whisk the eggs, salt and pepper.

  • Step 5: When thoroughly mixed, fold in the spinach, parsley and parmesan.

  • Step 6: Add the mushroom and garlic to the caramelized onions, continue to cook until mushrooms are wilted.

  • Step 7: Turn stove to low. Pour in the egg mixture. Cook approximately three minutes stirring occasionaly until the bottom is set.

  • Step 8: Place cast iron pan in hot oven, bake uncovered for 10 minutes or until the top is set.

  • Step 9: Remove, cut into wedges, serve.
