Step 1

You will need 1 large salad bowl.

Step 2

Peel, pit and dice avocados and place them in a bowl with the grape tomatoes and celery; season with salt and drizzle with 1 tablespoon of the dressing (see below);toss.

Step 3

In a large bowl combine the spinach, lettuce and half of the chives; season with salt and pepper and drizzle with 3 tablespoons of the dressing; toss and then transfer to serving salad bowl.

Step 4

Mound the avocado mixture in the center of the greens in the salad bowl and then arrange the egg slices in a circle around the avocado mixture. Sprinkle the blue cheese in a circle around the egg slices and finally sprinkle the bacon around the blue cheese. Drizzle the remaining dressing over everything and garnish with the remaining chives.
