Step by Step Method
Step 1
Preheat oven to 400F. Grease a 10-inch pie plate deep-dish, or you could use a 9 or 10-inch baking pan.
Step 2
In a medium frying pan, cook diced onion in a few tablespoons of olive oil over medium-high heat until translucent and tender. Add in garlic. Cook 1 minute. Add fresh spinach and cook until just wilted. Set aside to cool for a few minutes
Step 3
In a large mixing bowl, whisk together eggs, flour and baking powder. Whisk in milk, then stir in spinach-onion mixture and 1/4 cup crumbled feta cheese. Add salt and pepper to your liking or taste.
Step 4
Pour quiche base into prepared pan. Top with 1/2 cup crumbled feta cheese. Bake for 25 minutes, or until center is set and the outside edge is golden brown. Let set for 5 minutes, then slice and serve.
