Ingredients

The ingredients are:
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 6 ounce fresh baby spinach
  • 4 large eggs, light beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch cayenne
  • Salt and pepper
  • 1 cup low-fat milk
  • 3/4 cup crumbled feta cheese, divided

How to Make

  • Step 1: Preheat oven to 400F. Grease a 10-inch pie plate deep-dish, or you could use a 9 or 10-inch baking pan.

  • Step 2: In a medium frying pan, cook diced onion in a few tablespoons of olive oil over medium-high heat until translucent and tender. Add in garlic. Cook 1 minute. Add fresh spinach and cook until just wilted. Set aside to cool for a few minutes

  • Step 3: In a large mixing bowl, whisk together eggs, flour and baking powder. Whisk in milk, then stir in spinach-onion mixture and 1/4 cup crumbled feta cheese. Add salt and pepper to your liking or taste.

  • Step 4: Pour quiche base into prepared pan. Top with 1/2 cup crumbled feta cheese. Bake for 25 minutes, or until center is set and the outside edge is golden brown. Let set for 5 minutes, then slice and serve.
