Step by Step Method

Step 1

Heat half the oil in a frying pan over a medium to high heat and cook mince in two batches, stirring occasionally, for about 4 to 5 minutes or until cooked and then remove from pan and cover to keep warm.

Step 2

Heat remaining oil in same pan over medium heat and add onion, carrot and chilli and cook, stirring for about 3 minutes or until carrot is soft.

Step 3

Add curry powder, peas and currant and cook, stirring occasionally, for about 3 minutes, or until peas are tender and then return the mince to the pan and cook, stirring, until hat and season to taste.

Step 4

To make garlic lentil rice, heat oil and butter in a large saucepan and add onion and garlic and cook, stirrin g occasionally, for about 2 minutes or until soft and then add lentils and rice and cook stirring, for 1 minute, or until hot.

Step 5

Serve spicy beef over garlic lentil rice.
