Ingredients

The ingredients are:
  • 1/2 cup olive oil
  • 500 grams ground beef (mince)
  • 1 yellow onion (small onion, chopped)
  • 1 carrot, whole (small carrot, peeled and chopped)
  • 1 red chilli (long chilli, thinly sliced)
  • 1 tablespoon curry powder
  • 1 cup green peas (frozen)
  • 1/3 cup currants
  • FOR GARLIC LENTIL RICE
  • 1 tablespoon olive oil
  • 25 grams butter
  • 1 yellow onion (small onion, halved and thinly sliced)
  • 4 garlic cloves, sliced
  • 1 can (400 gram) lentils (brown lentils, drained)
  • 1 packet (250 gram) basmati rice (microwaveable basmati rice)

How to Make

  • Step 1: Heat half the oil in a frying pan over a medium to high heat and cook mince in two batches, stirring occasionally, for about 4 to 5 minutes or until cooked and then remove from pan and cover to keep warm.

  • Step 2: Heat remaining oil in same pan over medium heat and add onion, carrot and chilli and cook, stirring for about 3 minutes or until carrot is soft.

  • Step 3: Add curry powder, peas and currant and cook, stirring occasionally, for about 3 minutes, or until peas are tender and then return the mince to the pan and cook, stirring, until hat and season to taste.

  • Step 4: To make garlic lentil rice, heat oil and butter in a large saucepan and add onion and garlic and cook, stirrin g occasionally, for about 2 minutes or until soft and then add lentils and rice and cook stirring, for 1 minute, or until hot.

  • Step 5: Serve spicy beef over garlic lentil rice.
