Step 1

Sift first six ingredients int bowl, set aside

Step 2

Heat butter, molasses and corn syrup in small pan, simmer until butter is melted stirring constantly

Step 3

Preheat oven to 350

Step 4

Pour the melted ingredients int flour mixture stirring constantly

Step 5

When smooth add the eggs one by one stirring after each addition

Step 6

Put in a 7 x 9 cake pan and cook 35-40 minutes until a tester comes out clean like a knife

We love this cake! It's so moist and delicious and whipped cream kicks it up a notch for sure. Make sure you watch it the last few minutes of baking so it doesn't dry out. I pulled mine out about 3 minutes early and it was just right.

Great Gingerbread, all around. The aroma, while it was in the oven, was incredible. I wish I could have captured it into a candle. Loved the texture, as it was tender with a slight chewiness, almost reminiscent of the perfect textured brownie. Tasty and comforting as can be, like getting a hug from Mrs. Clause. Excellent Gingerbread! I've never made it in a pan like this, usually in a tube pan.. but this was perfect for us as we do not need that much. Great taste and so moist. Thanks for sharing!

This was a wonderful gingerbread cake. It's easy to make, too (that's always such a "plus" for me). I served it for a mid-day snack with a fresh pot of coffee, and my kids and husband insisted on topping their slices with chilled whipped cream, but I had mine without cream and it was plenty sweet, with every bite full of all those warm spices. I'll definitely make this again and won't change a thing because the flavor is perfect. Thanks for sharing your recipe, Marramamba.
