Step by Step Method
Step 1
Preheat oven to 200C/180C fan forced
Step 2
Grease a 12 hole (1/2 cup capacity) muffin pan.
Step 3
Combine flour, sugar, mixed spice and raisins in a large bowl and make a well.
Step 4
Combine butter, sweet potato, egg, milk and 2 tablespoon maple syrup in a separate bowl and then add to flour mixture and stir until just combine (DO NOT OVER MIX) and then divide mixture among prepared pan holes.
Step 5
Combine bacon, sunflower seeds, cinnamon and remaining maple syrup in a bowl and then spoon a little of the mixture over the top of each muffin and then bake for 20 to 22 minutes or until golden just firm to the round and then stand in pan for 5 minutes and then transfer to a wire rack.
Step 6
Serve warm or cold, drizzled with maple syrup or you can store in an airtight container in the fridge for up to 3 days.
