Step 1

Trim stalk from cauliflower and roughly chop.

Step 2

Cut cauliflower into florets.

Step 3

Place cauliflower stalk and florets, onion, garlic, stock, spice blend and 2 1/2 cups water in a large saucepan over medium high heat.

Step 4

Cover, bring to a simmer and simmer for 12 minutes to 15 minutes or until cauliflower is very soft.

Step 5

Remove from heat and stand for 5 minutes.

Step 6

Meanwhile, made Garlic Toast - preheat grill/broiler on high.

Step 7

Place baguette slices on a baking tray and grill/broil for 1 minute each side or until golden.

Step 8

Drizzle one side of each toast with oil and rub with cut side of garlic and season with salt.

Step 9

Using a stick blender, blend soup until smooth and season with salt and pepper.

Stir in yoghurt and then ladle soup into serving bowls and top with coriander, sprinkle with extra spice blend and drizzle with extra oil.

Serve with garlic toasts.
