Ingredients

The ingredients are:
  • 1 medium (1 kilogram) cauliflower head
  • 1 brown onion, chopped
  • 2 garlic cloves, peeled
  • 3 1//2 cups chicken stock
  • 1 1/2 teaspoons harissa (Middle Eastern spice blend, plus extra to serve)
  • 2 ounces plain Greek-style yogurt (1/4 cup)
  • Fresh coriander leave to serve
  • Extra virgin olive oil, to serve
  • FOR GARLIC TOAST
  • 8 diagonal slices (240 grams) baguette bread
  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove, halved

How to Make

  • Step 1: Trim stalk from cauliflower and roughly chop.

  • Step 2: Cut cauliflower into florets.

  • Step 3: Place cauliflower stalk and florets, onion, garlic, stock, spice blend and 2 1/2 cups water in a large saucepan over medium high heat.

  • Step 4: Cover, bring to a simmer and simmer for 12 minutes to 15 minutes or until cauliflower is very soft.

  • Step 5: Remove from heat and stand for 5 minutes.

  • Step 6: Meanwhile, made Garlic Toast - preheat grill/broiler on high.

  • Step 7: Place baguette slices on a baking tray and grill/broil for 1 minute each side or until golden.

  • Step 8: Drizzle one side of each toast with oil and rub with cut side of garlic and season with salt.

  • Step 9: Using a stick blender, blend soup until smooth and season with salt and pepper.

  • Step 12: Stir in yoghurt and then ladle soup into serving bowls and top with coriander, sprinkle with extra spice blend and drizzle with extra oil.
