Step by Step Method
Step 1
Reserve 2 tablespoons flour, and set aside. Place remaining flour in a shallow dish.
Step 2
In a small bowl, combine Cajun seasoning, garlic powder, and pepper. Rub pork chops evenly on both sides with the mixture.
Step 3
Pour oil into a cast iron skillet or other heavy skillet.
Step 4
Dip pork in buttermilk; dredge in flour. Lightly coat both sides of pork with cooking spray.
Step 5
Cook pork, in batches, in hot oil over medium-high heat, about 5 minutes per side or until golden brown. Drain on paper towels.
Step 6
Add reserved 2 tablespoons flour to pan drippings in skillet and stir until smooth. Add milk and salt, and cook, stirring constantly, until thickened and bubbly. Serve immediately with pork. Garnish, if desired, with coarse ground black pepper.
