Step by Step Method

Step 1

Preheat oven to 450 degrees.

Step 2

Mix together the olive oil, broth, garlic and herbs.

Step 3

Toss vegetables in a roasting tray and pour oil mixtures over vegetables.

Step 4

Season with salt & pepper.

Step 5

Cover and place in oven and roast until vegetables are fork tender, 35 to 45 minutes.

Step 6

Add the smoked sausage to the pan and baste with the cooking liquid.

Step 7

Pour the balsamic over the sausage and vegetables and return to the oven uncovered.

Step 8

After 15 minutes turn the sausage and baste again.

Step 9

Return to the oven for another 10 to 15 minutes.
