Ingredients

The ingredients are:
  • 1 pound smoked sausage, sliced (beef or pork)
  • 6 medium red potatoes, peeled and cut in quarters (or yukon gold, peeled and cut in quarters)
  • 1 cup carrots, mini (peeled)
  • 1 red bell pepper, julien sliced
  • 1 large onion, cut into wedges
  • 2 garlic cloves, crushed
  • 3 tablespoon oil (olive oil)
  • 2 teaspoons Italian herbs
  • 3/4 cup chicken broth
  • 4 tablespoons balsamic vinegar (I like a little more)
  • Freshly cracked black pepper (to taste)
  • Salt (to taste)

How to Make

  • Step 1: Preheat oven to 450 degrees.

  • Step 2: Mix together the olive oil, broth, garlic and herbs.

  • Step 3: Toss vegetables in a roasting tray and pour oil mixtures over vegetables.

  • Step 4: Season with salt & pepper.

  • Step 5: Cover and place in oven and roast until vegetables are fork tender, 35 to 45 minutes.

  • Step 6: Add the smoked sausage to the pan and baste with the cooking liquid.

  • Step 7: Pour the balsamic over the sausage and vegetables and return to the oven uncovered.

  • Step 8: After 15 minutes turn the sausage and baste again.

  • Step 9: Return to the oven for another 10 to 15 minutes.
