"I tend to overlook kielbasa when planning meals, but recently I've come across some fabulous kielbasa recipes, including this one that originated with the Taste of Home. The original recipe suggests serving with rice, but I don't think that's hearty enough unless it's brown rice. I used whole wheat egg noodles because that's what I had in the pantry. While that was good, I think something more substantial is needed. Possible alternatives are mashed potatoes, roasted potatoes, rotini, or barley. If you serve the recipe over anything other than egg noodles, you may need to prepare them first so everything is ready at the time time."

Step by Step Method

Step 1

Spray cooking spray in a large skillet, and brown kielbasa over medium-high heat. Remove kielbasa to a plate and keep warm.

Step 2

Saute the peppers and onion in the skillet until crisp/tender.

Step 3

While vegetables are sauteing, prepare the noodles. If making barley, rice, or mashed potatoes -- you'll need to do this step sooner because they take longer to prepare.

Step 4

In a bowl, combine the water and soup mix. Add soup mixture, hot pepper sauce, and kielbasa to the vegetables in the skillet.

Step 5

Reduce heat and simmer 5 minutes or until sauce thickens.
