Step by Step Method

Step 1

Using a large bowl prepare a ice water bath and set aside.

Step 2

Bring a large pot of water to a boil; add 2 teaspoons salt or how much you want.

Step 3

Add green beans and bring back to a boil. Cook until crisp tender, about 3-5 minutes. using a slotted spoon, transfer the beans to the ice water bath and let sit in ice water for about 3 minutes (this will stop the cooking process). Drain and set aside.

Step 4

In a large sauce pan bring 1/4 cup water or broth and butter to a boil over medium high heat. Add beans. Saute the beans until they are just heated through. Season with coarse salt and fresh ground pepper or lemon pepper.

I bought some green beans at the Farmer's Market the other day and this looked too good to pass up. I used 1 packet of Herb Ox sodium free chicken bouillon dry mix with water for the chicken broth to cut down on the salt. I used Lemon Pepper and fresh lemon juice, and I added about 2 teaspoons of chopped garlic. Simple, delicious and definitely a do again for me. Thank you for sharing your recipe with us MiniMia! I think there is a mistake on this recipe. It says 1/4 cup of chicken but I think it's supposed to be chicken stock, so that's what I tried. They were delicious with fresh green beans. I will even try them with frozen green beans sometime.
