"This is good for a small crockpot. The recipe says for a 3 quart size. This is adapted from Taste of Home. I seared my roast first before putting it in the slow cooker."

Step by Step Method
Step 1
Pat the meat to make sure it's dry. Mix the garlic and pepper together, and rub it all over the meat really well. In a large skillet, place some oil, and on medium heat sear the meat for about two minutes on each side.
Step 2
Place the meat in a slow cooker that is at least 3 quarts. Mix everything else except the cornstarch and water together in a bowl. Pour it over the roast.
Step 3
Put the lid on the slow cooker and cook on low for 3 1/2 to 4 hours.
Step 4
Take the roast out and keep warm if need be.
Step 5
With a strainer, skim the fat and strain the juices into a pan. Mix cornstarch and water in a bowl until smooth. Add to the pan. Cook; stirring for 1-2 minutes.
Step 6
Slice the meat and serve it with the gravy.
