"This is a very basic muffin but very good flavor. Another school recipe I am keeping. I have thrown in chocolate chips or other chips sometimes just to change it up but my favorite is the raisins. "

Step by Step Method

Step 1

Preheat oven to 400 and grease muffin tins or use muffin liners

Step 2

In a large bowl sift the flour,baking powder and salt. Stir in sugar.

Step 3

In another bowl beat the egg until foamy. Add milk and melted butter

Step 4

Pour the egg mixture into the dry ingredients and add raisins. Stir with a fork just until the whole mixture is dampened. (the batter will look lumpy)

Step 5

Spoon the batter into prepared muffin tins 2/3 full. Bake in preheated oven for 20 - 25 minutes. Remove muffins and cool on rack
