"This is a delicious potato salad I bring quite often to pot luck dinners. Very easy to make and it goes well with just about anything. This can be made gluten free by using gluten free mayonnaise."

Step by Step Method

Step 1

Place the potatoes, bay leaves and garlic cloves in a large pot and cover with water.

Step 2

Boil until potatoes are just cooked.

Step 3

Drain potatoes, remove bay leaf and garlic cloves and discard.

Step 4

Allow the potatoes to cool.

Step 5

In a large bowl, combine the cooled potatoes, boiled eggs, carrot, celery, 1 cup of mayonnaise, green onions, garlic powder, salt and pepper; cover and refrigerate for a couple of hours.

Step 6

Stir in the remaining mayonnaise and serve.

This was a good potato salad, but I wasn't crazy about the taste from the bay leaf in with the potatoes. Next time I will leave that part out.
