"This is such a simple quick sauce to make. It is wonderful not only over grilled meats, vegetables and even potatoes; but as a dipping sauce for fried foods. For a twist, and a tablespoon or two of white wine. I use gorgonzola, but any bleu cheese will work just fine."

Step by Step Method
Step 1
Sauce ... Add the butter to a small sauce pan or pot and bring to medium heat. Add the shallots and garlic and cook 1-2 minutes, just until tender. After the shallots are garlic are tender, you can add the white wine, at that point if you want.
Step 2
Reduce the heat to medium low, add the crumbled blue cheese, heavy cream, and season with pepper. Mix well, and continue to stir and simmer on medium low heat until the cheese is melted and the sauce naturally thickens. About 5-7 minutes. Add in the fresh chives and serve. ENJOY!
