Ingredients

The ingredients are:
  • 6 ounces bleu cheese (gorgonzola is actually what I prefer)
  • 2 shallots, minced
  • 1 small garlic clove, minced
  • 4 tablespoons butter (unsalted)
  • 1/2 cup heavy cream
  • 1 to 2 tablespoons white wine (dry white wine, optional)
  • 1 teaspoon fresh chives, chopped
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Sauce ... Add the butter to a small sauce pan or pot and bring to medium heat. Add the shallots and garlic and cook 1-2 minutes, just until tender. After the shallots are garlic are tender, you can add the white wine, at that point if you want.

  • Step 2: Reduce the heat to medium low, add the crumbled blue cheese, heavy cream, and season with pepper. Mix well, and continue to stir and simmer on medium low heat until the cheese is melted and the sauce naturally thickens. About 5-7 minutes. Add in the fresh chives and serve. ENJOY!
