Step by Step Method

Step 1

Over medium high heat heat a sauce pan and then add oil. Stir in onion, and the next 3 ingredients (-garlic) and saute for 2 minutes. Stir in the next the next 4 ingredients (-beans) and simmer 5-10 minutes; stir in lemon juice and parsley.

Step 2

In a bowl combine the remaining ingredients (sour cream - chiles) and serve with the beans

Yummy. I used as a filling for a small bean burrito for lunch which would make 2-3. I subbed out of necessity canned Roman beans for pintos, jarred pimentos for the bell pepper (was out of both) and omitted the buttermilk and lemon since my sour cream was a little thin. Made for billboard tag.
