  • 2 teaspoons olive oil
  • 1/2 cup onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 teaspoon cumin, ground
  • 2 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 tablespoon lemon juice
  • 2 tablespoons parsley, chopped
  • 2/3 cup reduced-fat sour cream
  • 3 tablespoons buttermilk, low-fat
  • 1 1/2 teaspoons chipotle chiles, canned in adobo sauce, minced

How to Make

  • Step 1: Over medium high heat heat a sauce pan and then add oil. Stir in onion, and the next 3 ingredients (-garlic) and saute for 2 minutes. Stir in the next the next 4 ingredients (-beans) and simmer 5-10 minutes; stir in lemon juice and parsley.

  • Step 2: In a bowl combine the remaining ingredients (sour cream - chiles) and serve with the beans
