Step by Step Method

Step 1

In a medium fry pan, heat the oil ( or butter) over medium heat, then stir in the flour, constantly stir until a medium dark roux is formed ( about 20 minutes) .

Step 2

Then stir in the onions, garlic and parsley - cook until the onions are clear.

Step 3

Gradually add the milk ( or cream) and continue cooking until thickened.

Step 4

Add the Parmesan and cook until melted.

Step 5

Then stir in the shrimp, hot sauce and salt.

Step 6

Cook until the shrimp are pink and opaque, about 3 or 4 minutes.

Step 7

Stir in the fettuccine, mix well and serve.

Tasted delicious I scaled back for one serve and used linguine as that is what I had but I erred and used way to much cream as I wrote the wrong amount down for one serve and it is the first time I have taken a roux beyond blonde but when I added the cream it mix split and looked like big curdled lumps but adding milk and whisking bought it back together and proceeded as per recipe for a delicious dinner which I thoroughly enjoyed especially the touch of tabasco which added a zing which I love. Thank you natsgarden123 made for What's On The Menu tag game at FF&F.
