Step by Step Method
Step 1
Heat oil in a large saucepan over medium-high heat and cook onion and carrot, stirring, for 5 minutes or until softened and then add mince and oregano and cook, breaking up the mince with a wooden a spoon, for 5 minutes or until browned.
Step 2
Add tomato paste and sauce and cook, stirring, for 30 seconds and then add 1/2 cup water and bring to the boil and stir in peas and cook for 2 minutes or until sauce thickens and then set aside to cool.
Step 3
Preheat oven to 220C and line 2 large baking trays with baking paper.
Step 4
Cut each pastry sheet in half to form 8 rectangles and trim length to 20cm and place 4 rectangles on prepared trays and top with cheese, mash and mince mixture.
Step 5
Cover with remaining pastry rectangles and using a fork, press edges together to seal and trim edges if needed.
Step 6
Brush pastry parcels with egg and bake for 30 minutes or until golden and crisp.
Step 7
Serve with tomato sauce, if desired.
